For my first day of Brunch Week, I decided to tackle the most ubiquitous of brunch accompaniments: Hollandaise sauce.  I’ve been intimidated by this sauce.  I knew that this sauce was indulgent and full of fat.  I was afraid to make it because I didn’t want to know exactly how much fat was in it.  It’s pretty high.  It’s not going to stop me from ordering eggs benedict, but I may save it just for special occasions.

original recipe

Hollandaise Sauce

Hollandaise Sauce

Ingredients

3 egg yolks
1/8 tsp dry mustard
Pinch salt
pinch white pepper
Pinch paprika
1 Tbs lemon juice, or more to taste
1 stick butter, melted

Instructions

  1. Place egg yolks, mustard, salt, pepper, and paprika in a medium bowl. Beat with a hand mixer on low. Turn mixer up to medium and slowly drizzle the butter in, mixing until the sauce has thickened. Beat in lemon juice. Adjust seasonings to taste.

  2. Looks great- perfect consistency. Fabulous way to honor Moms across the world 🙂

  3. Lovely photo! I love Hollandaise sauce, too. I sometimes whip up a Greek Yogurt-based fake Hollandaise sauce substitute at home (which I guess is healthier, but I just do it because it’s easier… : ) but there is nothing like the real thing!

    • Kokocooks says:

Ooh, never thought to use yogurt as a substitute. I bet it makes the sauce thicker, which I would also like.

  4. This is so DELICIOUS!

  5. I LOVE Hollandaise sauce. Your delicious recipe reminds me, I might want to try some with my usual grilled asparagus!

  6. This is perfect for any brunch. Such a great recipe and that photo just makes me want to dig right in.

  7. So… I just started enjoying hollandaise sauce recently. Must try your recipe. As always, your photos are gorgeous!

  8. I’ve never made hollandaise before either. I thought it was more complicated than that, involving heating things slowly. I’ve got to try this. It looks easy!

  9. I still have never made a homemade hollandaise sauce but I have been meaning to try it.

  10. What does Hollandaise sauce taste like? I’m not a huge egg fan, so trying it has really intimidated me, but now I”m afraid I’m missing out on something really awesome. Great way to start #BrunchWeek!

    • Kokocooks says:

      Carrie,

You can’t really taste the egg in the Hollandaise sauce. It’s rich, creamy, and I like mine with a lot of lemon, so that’s the predominant flavor.
